Peanut Butter Coconut Energy Bites
Quick, easy, and yummy snack. Pair it up with an apple for a complete snack.
1 cup oats
1/2 cup natural peanut butter
1/3 cup honey
1 cup unsweetened coconut flakes
1/2 cup ground flax
1/2 cup chocolate chips
1 tsp vanilla
Mix it all up until blended. Shape into balls. Store in the fridge in an air tight container. Makes about 30 bite sized balls.

Quinoa Protein Bars
Quinoa Protein Bars
Ingredients:
2 cups cooked quinoa
1/2 cup natural peanut butter
3 tbsp honey
1/4 teaspoon sea salt
3/4 cup quick cooking oats or rolled oats (I used quick cooking)
1 banana mashed
1 egg
1/2 cup unsweetened coconut flakes
1/2 cup chocolate chips (I used dark chocolate)
Mix first 4 ingredients well. Add next five ingredients, spread out on parchment paper lined pan. Bake at 350 for 20 minutes.

Pumkin Protein Bars
I have been looking for a yummy fall recipe. This really hit the spot.
1/4 cup light packed brown sugar
2 tbsp pumpkin pie spice
2 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 cups oat flour
2 scoops vanilla protein powder
1/2 cup unsweetened applesauce
4 tsp vanilla extract
4 egg whites
15 oz can pure pumpkin (not pumpkin pie filling, plain ole pumpkin)
1/2 cup unsweetened vanilla almond milk
1/2 cup chopped pecans
Preheat oven to 350 degrees. Mix all dry ingredients in a bowl (except for the nuts). Then in a separate bowl beat the applesauce, vanilla extract, egg whites, pumpkin, and milk. Then add the dry ingredients in. Last add in the nuts.
You Need:
