Oatmeal Scotchies Clean Eating Cookie Dough Balls

Oatmeal Scotchies Clean Eating Cookie Dough Balls

Seriously this recipe is awesome!  It has all the wonderful components I enjoy... peanut butter, butterscotch chips, it's clean, quick and totally delicious!

Ingredients:
1/2 cup whole wheat flour
1 1/4 cup rolled oats
1 tsp cinnamon
1/4 tsp salt
1/2 cup natural creamy peanut butter
1/3 cup maple syrup
1/4 cup unsweetened applesauce
1 tbsp honey
2 tsp vanilla extract
1/4 cup butterscotch chips

Line a small baking sheet with parchment paper and set aside.

In a small bowl combine dry ingredients.  Set aside.

In another bowl combine peanut butter, maple syrup, applesauce, honey, and vanilla.  Stir well.

Add dry ingredients into liquid.  Add in chips.

Roll into balls using 2 tbsp of dough for each ball.

Makes 14 balls.  Approx 135 calories a piece.  Store in refrigerator or freezer.  (I put mine in the freezer so I would have to thaw them out before I could eat them... they are that good!)
