Pumpkin Pie Protein Truffles

Pumpkin Pie Protein Truffles



















1 packet instant oatmeal + 3 tbsp
3 tbsp pure pumpkin (I used Farmer's Market)
1 1/2 tsp honey
sprinkle cinnamon
sprinkle pumpkin pie spice
1/4 cup crushed pecans




Combine all ingredients except pecans until well blended.  Roll into balls then roll each ball in crushed pecans.  Refrigerate until firm.  Mine yielded 6 balls.  I eat two for a snack with a piece of fruit.  These are a great fall snack!
